How to cook
pork adobo
Serves 2-3 people. Best paired with a cup of rice.
Ingredients
- 4 tbsp of vinegar
- 3 tbsp of soy sauce
- 4 tbsp of oyster sauce
- 6 cloves of garlic (minced)
- 1 bulb of onion (minced)
- 500 grams of pork belly
- 1 cup of water
- Bay leaves
- Ground pepper
Instructions
- Sautee garlic and onion in a wok pan over medium heat
- When the garlic is golden brown and the onion is soft, turn the heat to high and add the pork. Pan fry until the sides are golden brown.
- Add soy sauce and oyster sauce and continue frying and mixing until the sauce is reduced.
- Add water until the pork is submerged, then lower the heat to a medium
- Once the water is boiling, add ground pepper and bay leaves (to taste)
- Cover the pan with a lid and let the pork cook and tenderize. I let it cook for around 30–45 minutes, adding water as needed.
- Once the meat is tender, pour in the vinegar. Let it boil before covering the pan again.
- After 10-15 minutes, remove the cover and continue mixing the meat with the sauce until the sauce is reduced and has a slightly thicker consistency. Add more pepper as needed.
- Turn off the stove and serve! 😋
